Using a very sharp knife, or better yet, a mandoline food slicer, slice the onions very thin, keeping them consistent in thickness. Place onion slices right next to each other on top of the cheese, but make sure they don’t overlap. To get crisp, all the moisture needs to cook out, and the thinner the slices are, the better.

Spritz or brush tops of onion slices with about ½ tablespoon olive oil. Give them each a light coating, but don’t saturate them. I’ve been using this oil sprayer for cooking for over 5 years. It comes in a set of two, and they work great.
