Raspberry Lemonade Ice Cream Pie

Our family has been making this fresh, light, delicious raspberry lemonade ice cream pie for a long time. It started on one of our summer vacations simply because it was an easy dessert to make while staying in a condo.

It doesn’t call for many ingredients, and it doesn’t need to be baked.

Plus, it tastes like summertime, and during the dreary winter months, that’s a great selling point!

Easy Step-By-Step Instructions for Raspberry Lemonade Ice Cream Pie

Golden Oreo Crust Recipe
Start with 32 Golden Oreo Cookies (13 ounces) for the crust.

Crush them to make 3 cups of crumbs.

Melt 6 tablespoons butter, and pour into pie plate. Swirl all around to grease sides.

. . . mix thoroughly with a fork.

Press the crumb mixture into the bottom and up the sides, of the plate.

Refrigerate or freeze for 20-30 minutes to set.
Squeezing lemons for juice
Squeeze lemons to get ¼ cup fresh lemon juice. Here’s a confession: I frequently skip this step. The fresh juice makes it wonderful, but it’s plenty great without. It’s up to you.
Raspberry Lemonade Ice Cream Pie Recipe
In large mixing bowl, combine 4 cups vanilla ice cream (softened—not melted), ¾ cup frozen raspberry lemonade concentrate (or pink lemonade), ¼ cup fresh lemon juice, and 1-2 drops red food coloring (if desired) Stir together until completely combined.
Raspberry Lemonade Ice Cream Pie
Pour into Golden Oreo crust, and spread to smooth. Freeze several hours or overnight.
Homemade Raspberry Lemonade Ice Cream Pie
Just before serving, garnish with fresh raspberries, lemon slices, and whipped cream.

Here’s a helpful hack: To make the pie easier to remove from the plate, set it in a sink with about ½ inch of hot water. Leave it for 1-2 minutes, but take care not to get any water in (or on) the pie. 🙂

  • Crush the cookies
  • Melt butter in small bowl, and then pour into pie plate. Swirl all around to grease sides.
  • Mix crumbs with butter, and press into bottom and sides of pan.
  • Chill in freezer 20-30 minutes to set.

Pie Directions:

  • In large mixing bowl, combine softened ice cream, raspberry lemonade, lemon juice, and food coloring (if using). Whisk until completely combined, pour into crust, and spread to smooth.
  • Freeze several hours or overnight.
