Chocolate Chip Pancakes

Perfecr Chocolate Chip Pancakes with maple syrupOkay, I admit that these are more like a dessert than a breakfast, but my kids love them.  They’re too indulgent for my regular breakfast rotation, but who says that you can’t make pancakes for dessert?  Anyway, they’re really good with vanilla syrup, and you can just click here for that recipe.

Ingredients
  1. 1 cup flour
  2. 2 tablespoons sugar
  3. ½ teaspoon salt
  4. ½ teaspoon baking powder
  5. ¼ teaspoon baking soda
  6. ¾ cup buttermilk
  7. ¼ cup milk (may need another couple of tablespoons)
  8. 1 large egg (room temperature)
  9. 2 tablespoons butter, melted and cooled
  10. 1 teaspoon vanilla
  11. 1/2 -1 cup miniature chocolate chips
  12. 1/2 cup regular size chocolate chips for garnish (optional)
Instructions
  1. Heat large skillet over medium heat (about 350 degrees F.).
  2. Combine flour, sugar, salt, baking powder, and baking soda.
  3. Combine buttermilk and milk and microwave to bring to room temperature (20-30 seconds).
  4. Whisk in egg, butter, and vanilla.
  5. Combine wet ingredients with dry ingredients, and whisk just until mixed.
  6. The batter should pour, not glug. Add additional milk, if necessary, but be careful. If it’s too runny the pancakes will be flat.
  7. Right before cooking, generously grease the griddle. Give it a few minutes to return to a uniform temperature.
  8. Pour batter on griddle, and sprinkle tops with chocolate chips.
  9. Cook pancakes 2-3 minutes per side.
  10. Serve hot.
Notes
  1. Yields 8-12 pancakes

Preheat griddle to medium or 350 degrees F.  Microwave buttermilk and milk until room temperature (20-30 seconds).

Melt in microwave for 20-30 seconds
2 tablespoons of butter
Allow to cool about 10 minutes.

Combine
¾ cup buttermilk
¼ cup milk (may need another couple of tablespoons)
1 large egg (room temperature)
2 tablespoons butter, melted and cooled
1 teaspoon vanilla
Beat gently with a fork until mixed.

In a medium-size mixing bowl, whisk together
1 cup flour
2 tablespoons sugar
½ teaspoon salt
½ teaspoon baking powder
¼ teaspoon baking soda

Batter for Perfect Pancakes

Combine wet ingredients and dry ingredients, and whisk just until mixed.

Pour the batter onto the hot skillet.

Sprinkle batter with mini chocolate chips BEFORE flipping. You can put some more on AFTER flipping, as well. It’s up to you.

Sprinkle with additional chocolate chips (if desired), and serve with vanilla syrup, maple syrup, or your favorite toppings.
