Today is one of those days when the wind is blowing, and it’s cold! No matter what I do, I can’t seem to get my hands and feet warm. On a day like this, nothing hits the spot like a nice warm bowl of soup. This soup is easy to make, and tastes delicious. Plus, wrapping my hands around that bowl warmed them up!
Simple Broccoli Cheddar Soup

Ingredients
- 3-4 cups broccoli
- 1 medium onion
- 1 clove garlic minced (about 1 teaspoon)
- 4 cups milk,hot
- 2 14.5 ounce cans chicken broth, hot (approximately 4 cups)
- 3 cups grated cheddar cheese
- ½ cup butter
- ½ cup flour
- 1 teaspoon seasoned salt
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- Wash and cut the broccoli.
- Cook it with a little salt until tender. Drain well.
- To speed up the process, heat the chicken broth in the microwave, then heat the milk.
- Dice the onion and sauté in 2 tablespoons of the butter over medium heat until wilted.
- Mince the garlic, add it to the onions, and sauté for 2 minutes.
- Add the rest of the butter to melt.
- Stir in the flour, seasoned salt, salt, and pepper.
- Add the hot chicken broth and whisk until smooth. Then stir in the milk, and whisk constantly until it comes to a boil.
- Stir in the cheese and the broccoli.
- Serve immediately.
