Simple Broccoli Cheddar Soup

Today is one of those days when the wind is blowing, and it’s cold!  No matter what I do, I can’t seem to get my hands and feet warm.  On a day like this, nothing hits the spot like a nice warm bowl of soup.  This soup is easy to make, and tastes delicious.  Plus, wrapping my hands around that bowl warmed them up!

Wash and chop the broccoli. I only use the florets, but you can use the stem, as well.

Chop the pieces so that they're small enough to fit on a soup spoon.

Cook the broccoli with a little salt and about 1 cup of water until tender.

In a 2 quart sauce pan, cook the broccoli with a little salt and about 1 cup of water until tender.  Drain it well.

Dice and saute the onion in 2 tablespoons of butter.

Stir in the cheddar cheese. I used a mixture of white and yellow cheeses, but if you want your soup to be more of an orange color, use only yellow cheese.

Ingredients
  1. 3-4 cups broccoli
  2. 1 medium onion
  3. 1 clove garlic minced (about 1 teaspoon)
  4. 4 cups milk,hot
  5. 2 14.5 ounce cans chicken broth, hot (approximately 4 cups)
  6. 3 cups grated cheddar cheese
  7. ½ cup butter
  8. ½ cup flour
  9. 1 teaspoon seasoned salt
  10. ½ teaspoon salt
  11. ½ teaspoon pepper
Instructions
  1. Wash and cut the broccoli.
  2. Cook it with a little salt until tender. Drain well.
  3. To speed up the process, heat the chicken broth in the microwave, then heat the milk.
  4. Dice the onion and sauté in 2 tablespoons of the butter over medium heat until wilted.
  5. Mince the garlic, add it to the onions, and sauté for 2 minutes.
  6. Add the rest of the butter to melt.
  7. Stir in the flour, seasoned salt, salt, and pepper.
  8. Add the hot chicken broth and whisk until smooth. Then stir in the milk, and whisk constantly until it comes to a boil.
  9. Stir in the cheese and the broccoli.
  10. Serve immediately.
