Ingredients
  1. 4 medium-large potatoes (cooked)
  2. 1 10.5 ounce can Cream of Chicken soup
  3. 1 cup shredded cheese
  4. 1 cup sour cream
  5. ¼ cup butter
  6. ½ cup chopped onion
  7. ¼ teaspoon salt
  8. 1-2 chopped green onion for garnish (optional)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Grease an 8 x 8 square or 13 x 9 baking pan.
  3. Peel and slice, dice, or shred the potatoes
  4. Sauté the onion in about 1 tablespoon of the butter. When they’re wilted, add the rest of the butter to melt.
  5. Stir in Cream of Chicken soup
  6. Stir in cheese until melted
  7. Stir in sour cream.
  8. Add potatoes and completely combine.
  9. Pour into prepared baking pan, garnish with green onion, and cover tightly with foil
  10. Bake for 45 minutes at 350 degrees F.
