Red Wine and Rosemary-Braised Short Ribs

Preheat oven to 450 degrees F, and warm a Dutch oven to medium high on the stove.

Put the ribs in a large mixing bowl, and sprinkle with olive oil, salt, and pepper.

Set the browned ribs aside, and drain all but 1 tablespoon of the fat from the Dutch oven. Saute the onion until translucent, then add rosemary and garlic. Saute for another minute or two.

Lay a piece of heavy-duty foil over the pot. Press it down to touch the meat, and seal the edges. Then cover with the lid.

  1. 12 short ribs (about 3 ½ - 4 pounds)
  2. 1 tablespoon olive oil

  4. 1 large onion, diced
  5. 2 cloves garlic, minced
  6. 1 sprig fresh rosemary

  8. 1 ½ cups red wine
  9. 14.5 ounce can chicken broth (about 2 cups)

  3. Dice the onion and mince the garlic.
  4. Brown the ribs on both sides in the Dutch oven (about 5 minutes per side). You’ll need to do it in two batches. Set aside.
  5. Drain all but 1 tablespoon of fat from the Dutch oven, and sauté the onions until translucent.
  6. Add the garlic and rosemary and sauté for another 2 minutes.
  7. Stir in the flour, wine, chicken broth, and tomatoes.
  8. Return ribs to the pan, and bring to a boil.
  9. Cover the whole pan with a sheet of heavy duty aluminum foil. Press it down so that it touches the meat mixture, then seal it tightly around the edges.
  10. Put the lid on, and bake at 450 for 1 ½ hours.
