Ingredients
  1. 1 pound potatoes (one large russet)

  3. Salt and pepper to taste
  4. Paper towels
Instructions
  1. Wash and dry potato, and slice very thin. Place slices in a large bowl of ice water, and swirl around to separate. Let sit for 5 minutes, then remove from water, and dry in a single layer on paper towels.
  2. Blot tops with more paper towels to be sure they’re completely dry. Line a large microwave-safe plate with more paper towels. Cover with single layer of potatoes. Brush both sides of each slice with olive oil, sprinkle lightly with salt, and microwave on high for 2-4 minutes, or until golden. Turn them over, re-arrange so the center ones move to the outside of the circle, and microwave on high for another 2 to 4 minutes. Watch carefully.
