Ingredients for CRUST
- ½ cup butter, melted
- 1 ½ cups animal cracker crumbs (6 ounces animal cracker cookies)
- 3 tablespoons sugar
- ¼ teaspoon salt
Ingredients for PIE
- 1 can (14 ounces) sweetened condensed milk
- 4 egg yolks
- 6 tablespoons frozen orange juice concentrate
- 6 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- 1 teaspoon orange zest
Ingredients for CREAM TOPPING
- 1 ½ cups heavy whipping cream
- ¼ cup sugar
- 1 teaspoon orange zest
- ½ teaspoon vanilla extract
Directions for CRUST
- Preheat oven to 325 degrees F.
- Crush animal crackers and combine crumbs with sugar and salt.
- Melt butter in pie plate, then swirl around edges to grease. Pour in crumbs, mix thoroughly, and press into bottom and up sides of plate.
- Bake for 15 minutes.
Directions for PIE
- In a medium sized mixing bowl, whisk together sweetened condensed milk, egg yolks, orange juice concentrate, lemon juice, and lemon and orange zest.
- Pour into baked crust, and bake at 325 degrees for 15-17 minutes, until set, but slightly jiggly in the center.
- Cool completely, then refrigerate several hours or overnight.
Directions for CREAM TOPPING
- Beat whipping cream until peaks form, then fold in sugar, orange zest, and vanilla. Serve on pie.
