Cilantro-Lime rice is a great alternative to plain old white rice because it’s fresh and light with tons of flavor. It’s a side dish that can stand alone. We eat it with Mexican foods like tacos or enchiladas, but it’s also wonderful with grilled fish or chicken.

Cilantro-Lime Rice

Ingredients
- 1 tablespoon butter
- ½ cup onion, finely chopped
- 1 cup long grain rice
- 1 clove garlic, finely minced
- 1 teaspoon chicken bouillon
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- 2 cups water
- 2 tablespoons freshly chopped cilantro
- 1 tablespoon fresh lime juice
Instructions
- In medium sauce-pan, over medium-low heat, melt butter and sauté onion. Increase heat to medium, add rice, and stir constantly for 2-3 minutes. Add minced garlic, bouillon, salt, and pepper, and stir for 1 minute more. Add water, increase heat to high, and stirring constantly, bring to a boil.
- Cover, reduce heat to medium or medium-low, and simmer for 20 minutes. (The water should be boiled out.) Remove from heat, but DO NOT remove lid. Let stand for 5 minutes more.
- Add chopped cilantro and fresh lime juice, and stir until well mixed.
- Serve immediately.
Notes
- Yields 3 cups cooked rice, so it serves 3-6 people depending upon portion size.
