Perfect Pancakes

Perfect Pancakes with butter and maple syrupThis is the recipe that I’ve been making for my family for years.  I like it because the pancakes are delicious, and it doesn’t call for any special ingredients.  Translation:  I always have these ingredients in my house.  This one’s a winner.

Ingredients
  1. 1 cup flour
  2. 1 tablespoon sugar
  3. 2 teaspoons baking powder
  4. ½ teaspoon salt
  5. 1 egg, room temperature
  6. 1 cup milk
  7. 2 tablespoons butter, melted and cooled
  8. ½ teaspoon vanilla
Instructions
  1. Heat large skillet over medium heat (about 350 degrees F.).
  2. Combine flour, sugar, salt, and baking powder.
  3. Microwave milk to bring to room temperature (20-30 seconds).
  4. Whisk in egg, butter, and vanilla.
  5. Combine wet ingredients with dry ingredients, and whisk just until mixed.
  6. The batter should pour, not glug. Add additional milk, if necessary, but be careful. If it’s too runny the pancakes will be flat.
  7. Right before cooking, generously grease the griddle. Give it a few minutes to return to a uniform temperature, and cook pancakes 2-3 minutes per side.
  8. Serve hot.

  1. Yields 8-12 pancakes

Preheat griddle over medium heat to 350 degrees F.  Warm milk in the microwave for 20-30 seconds until it comes to room temperature.

Melt in microwave for 20-30 seconds
2 tablespoons of butter
Allow to cool about 10 minutes.

In a medium-size mixing bowl, whisk together
1 cup flour
1 tablespoon sugar
2 teaspoons baking powder
½ teaspoon salt

Combine
1 egg, room temperature
1 cup milk
2 tablespoons butter, melted and cooled
½ teaspoon vanilla
Beat gently with a fork until mixed.

Combine wet ingredients and dry ingredients, and whisk just until mixed.

Pour the batter onto the hot skillet.

Cook 2-3 minutes per side until golden.
