Quick and Easy Baked Chicken Strips

These chicken strips are moist and tender, and the coating is delicious!  They’re easy to make, and I usually have all the ingredients in my pantry.

Preheat oven to 350 degrees F.

Melt one cup butter in a bowl.

Slice the chicken breasts into 1/2 inch thick strips.

Lay them out on a baking pan. I line mine with parchment, but you can use a silicone mat or just grease the pan with a non-stick cooking spray

Ingredients
  1. 2 pounds chicken breasts
  2. 1 cup butter, melted and cooled
  3. 7 ounce bag barbeque flavor potato chips
  4. 3 sleeves round butter crackers (about 100)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Melt the butter in a bowl, and let it cool.
  3. Combine the chips and crackers, and with a rolling pin or food processor, make fine crumbs. It should make about 4 cups. Put them in a pie plate or shallow dish.
  4. Trim fat, and slice the chicken into long strips approximately ½ inch thick.
  5. Dip each chicken strip into the butter, and completely coat.
  6. Dip each buttered strip in the crumbs, and completely coat.
  7. Lay them out on a parchment lined baking sheet.
  8. Bake at 350 degrees for 30-35 minutes.
  9. Allow to cool for 5 minutes before eating.
