Bruschetta

These make wonderful appetizers, snacks, or a side dish.  Sometimes, I just eat them as a meal.  YUM!

Dice your tomatoes.

Combine sugar, salt, pepper, olive oil, and balsamic vinegar, and whisk.

Stir to coat, and allow to marinate for a few minutes while you prepare the bread.

Slice the baguette into 1/2 inch slices. (They'll do it for you at the bakery.)

Lay them out in a single layer on a cookie sheet.

Bake at 350 degrees for 5 minutes. Remove from oven, and immediately rub each slice with garlic.

  1. 1 baguette (sliced in ½ inch slices)
  2. ¼ cup butter (softened)
  3. 1 clove garlic (cut in half)
  4. 6-8 fresh tomatoes
  5. 1 teaspoon minced basil
  6. 2 tablespoons sugar
  7. 1 teaspoon salt
  8. ½ teaspoon pepper
  9. ¼ cup extra virgin olive oil
  10. ¼ cup balsamic vinegar
Instructions
  1. Preheat oven to 350 degrees F

  4. Add the diced tomatoes and basil, and stir to coat.
  5. Slice the baguette, or have them do it for you at the bakery.
  6. Butter both sides of each slice, and place them on a baking sheet.
  7. Warm them in 350 degree oven for 5 minutes.
  8. Remove and immediately rub each slice with garlic.
  9. Top each slice with the tomato mixture.
