Bruschetta

BruschettaBruschetta is a fresh Italian style salsa, and it’s delicious when served with toasted baguette slices.  It makes wonderful appetizer, snack, or a side dish, and sometimes, I just eat it as a meal.  YUM! BruschettaIt’s quick and simple to make, so let’s do it.

Bruschetta

Start by dicing
6-8 fresh tomatoes
and mincing
1 teaspoon minced basil
Combine in a mixing bowl.

In a small mixing bowl, whisk together
2 tablespoons sugar
1 teaspoon salt
½ teaspoon pepper
¼ cup extra virgin olive oil
¼ cup balsamic vinegar

Drizzle dressing over tomato/basil mixture.

Stir until well combined, and set aside for a few minutes.

Preheat oven to 350 degrees F, and slice a fresh baguette.
(You could have them do this for you at the bakery, but it will begin to go stale quickly.)

Spread each slice with softened butter., (I do both sides) then place them on a baking sheet.

Warm them in 350 degree oven for 5 minutes.

Remove and immediately rub each slice with garlic.

Ingredients
  1. 1 baguette (sliced in ½ inch slices)
  2. ¼ cup butter (softened)
  3. 1 clove garlic (cut in half)
  4. 6-8 fresh tomatoes
  5. 1 teaspoon minced basil
  6. 2 tablespoons sugar
  7. 1 teaspoon salt
  8. ½ teaspoon pepper
  9. ¼ cup extra virgin olive oil
  10. ¼ cup balsamic vinegar
Instructions
  1. Preheat oven to 350 degrees F
  2. Dice the tomatoes.
  3. Combine the sugar, salt, pepper, olive oil, and vinegar in a mixing bowl, and whisk.
  4. Add the diced tomatoes and basil, and stir to coat.
  5. Slice the baguette, or have them do it for you at the bakery.
  6. Butter both sides of each slice, and place them on a baking sheet.
  7. Warm them in 350 degree oven for 5 minutes.
  8. Remove and immediately rub each slice with garlic.
  9. Top each slice with the tomato mixture.
