This is a quick and easy version of salsa. I like it mostly blended, so I use the blender. If you like yours chunkier, then dice your ingredients instead of blending them. Also, we don’t really like spicy foods, so this is a pretty mild salsa. Add peppers to give it as much kick as you want.

Ingredients
- 1 can (14 ounce) diced tomatoes
- 1 can (10 ounce) RO TEL tomatoes (I use Mexican Style because it has a little kick, but the other is fine)
- 1 can (5.5 ounces) V8 Spicy Hot juice
- 3 green onions chopped (You can use red onion or sweet onion if you prefer)
- ½ cup cilantro leaves
- ½ teaspoon sea salt
- ½ teaspoon fresh black pepper
- ½ teaspoon honey
- 1 teaspoon fresh lime juice (about ½ lime)
Instructions
- Pulse everything in the blender, or chop to desired consistency.
